Some biscuits are good. Others are great. And then there are hazelnut biscuits. They’re buttery, slightly crumbly, and packed with that rich, roasted hazelnut flavor that makes you want to pause, take a sip of something warm, and have another. (And maybe another.)
They’re not flashy. But they’re the kind of biscuit that gets people asking, “Did you make these?” with a bit of awe in their voice. Whether you’re baking for the biscuit tin or dressing them up for gifting, these are a go-to favorite at Flux.
Where Do Hazelnut Biscuits Come From?
Hazelnut-based bakes pop up in a few places—especially across Europe. Think Italian baci di dama, German nussplätzchen, or even French-style nut shortbreads. However, the version we love is a little rustic, a little buttery, and all about that roasted nut flavor.
They’re a cousin of shortbread—just with a boost of toasted hazelnuts that takes things to another level.
How to Make Hazelnut Biscuits
This recipe is as unfussy as it gets. No fancy equipment, no tricky steps—just real ingredients and a bit of patience (mainly while they cool).
Ingredients:
- 1 cup (150g) roasted hazelnuts, finely ground
- 1 cup (225g) unsalted butter, softened
- ½ cup (100g) caster sugar
- 1 tsp vanilla extract
- 1 ¾ cups (260g) plain flour
- Pinch of salt
Optional for finishing:
- Icing sugar for dusting
- Melted dark chocolate for dipping or drizzling
Method:
- Preheat your oven to 160°C (fan-forced) and line a baking tray with parchment paper.
- In a large bowl, cream the butter and sugar until light and fluffy. Add the vanilla.
- Stir in the ground hazelnuts, flour, and salt. Mix until a soft dough forms. If it feels a bit sticky, chill it in the refrigerator for 20 minutes.
- Roll the mixture into small balls (about a tablespoon each) and place them on the tray, gently flattening them slightly with your fingers or the bottom of a glass.
- Bake for 15–18 minutes or until the edges are lightly golden.
- Cool on a rack. Once cooled, dust with icing sugar or dip in chocolate if you’re feeling fancy.
Easy Variations
- Swap the vanilla for a splash of hazelnut liqueur.
- Add a pinch of cinnamon or nutmeg for a warm spice twist.
- Sandwich two biscuits together with Nutella or ganache (chef’s kiss).
What to Serve With Hazelnut Biscuits
Hazelnut biscuits love a warm drink. Try them with:
- A flat white or cappuccino
- A strong black tea
- A small glass of Frangelico if you’re having them after dinner
