Dominique Ansel, a pastry chef of the modern era, has captivated the world’s imagination with his playful creativity. Best known as the creator of the Cronut®, he has redefined pâtisserie by infusing classical skill with a sense of fun, sparking a new wave of interest in the culinary arts.
Early Life and Training
From humble beginnings in Beauvais, a small town in northern France, Dominique Ansel’s journey to becoming a world-famous pastry chef is truly inspiring. His discovery of cooking as a trade led him to train at a culinary school in France and then to local kitchens, where he honed his craft.
Ansel worked with world-renowned chefs, including at the famous Fauchon in Paris, where he spent several years refining his technique in classical French pastry. This experience gave him a solid foundation in traditional methods before he began experimenting with modern twists.
Moving to the USA and the Birth of the Cronut®
In 2006, Dominique Ansel moved to New York City to work as the executive pastry chef at Daniel, a three-Michelin-star restaurant led by chef Daniel Boulud. After six years, he opened Dominique Ansel Bakery in 2011 in Soho, Manhattan.
Two years later, in May 2013, the Cronut® was born. A cross between a croissant and a doughnut, this pastry caused lines to wrap around the block for months. People lined up as early as 5 a.m. for the chance to taste it. The creation went viral globally, sparking countless imitations, but Ansel held the trademark and released a new flavour each month, keeping it exciting and fresh.
More Than Just a Cronut®
While the Cronut® made him famous, Dominique Ansel’s legacy goes beyond one pastry. He introduced creations like the Frozen S’more, Cookie Shot (a chocolate chip cookie shaped like a shot glass filled with milk), and the Blossoming Hot Chocolate, where a marshmallow flower opens in a warm cup of cocoa.
Each dessert combined technical skill with a sense of fun, bringing theatre and delight back into the pastry world.
