It’s smooth, rich, a little tart, and yes, it does sound like something you’d whisper in French. But don’t be fooled by the name—this dessert is dead simple to make and even easier to eat.
Whether you’re filling a tart, dunking strawberries, or just eating it straight from the bowl (no judgement), this ganache with a fruity twist is one of our absolute go-tos.
So, What Is Ganache Anyway?
Ganache is a French creation—because of course it is—that’s made by gently melting chocolate with cream. That’s it. It’s the base for truffles, tart fillings, cake glazes, and spoonfuls at midnight.
What we’ve done is give it the Flux treatment by adding a burst of fresh berry flavour. The result? A rich, creamy chocolate experience with a bright, jammy edge that stops it from being too much (if there is such a thing).
Berry Ganache Recipe
Ingredients:
200g dark chocolate (go for the good stuff)
150ml thickened cream
100g fresh or frozen raspberries (or mixed berries)
1 tbsp caster sugar (optional)
1 tsp vanilla extract
Pinch of salt
How to Make It:
Step 1: Make your berry purée
Pop your berries into a saucepan with the sugar and cook over low heat for 5 minutes or so, until they’re soft and syrupy. Push the mixture through a sieve to get rid of the seeds—unless you like a bit of crunch.

Heat the cream in a small saucepan until it’s just about to bubble. Then pour it over your chopped chocolate and let it sit for a minute while you resist the urge to stir.
Step 3: Stir it all together
Now stir the chocolate and cream until smooth and glossy. Add your berry purée, a dash of vanilla, and a pinch of salt. Mix until you’ve got a dreamy, ruby-tinted ganache that smells like actual happiness.
How to Use It
Pour it into a tart shell and chill for a simple but showy dessert
Layer it between sponge cakes (no frosting necessary)
Dip fresh fruit, biscuits or even marshmallows into it
Pipe it into doughnuts or profiteroles
